 Chocolate Cherry Nirvana Smoothie

A delicious dessert on a hot day, or a wonderful "carry-out" breakfast, perhaps with a small bag with some almonds and high-fiber cereal.

This recipe is from the kitchen of Food for Life instructor Jill Eckart, C.H.H.C, who works full time for PCRM in Washington, D.C. "I developed this recipe by chance. I was trying to find a smoothie that would win the hearts of kids and adults alike. This one does just that! Chocolate Cherry Nirvana is one of my all-time favorites. Kids love the smooth, chocolaty taste, and adults are wowed at how delicious and healthy this smoothie is. I like to switch it up by using plain or vanilla soy or rice milk for a slightly different but equally delicious taste. If you have trouble finding frozen cherries, strawberries can be substituted. Smoothies are a great way to get a few servings of fruit. And if you are feeling really adventurous, add some fresh spinach to this recipe—it won't alter the taste very much, but it will certainly give the smoothie a boost in nutrition."

Ingredients

Makes 2 servings

2 cups unsweetened frozen cherries
2 bananas
1 1/2 cups chocolate rice milk or low-fat chocolate soymilk, or 1 1/2 cups vanilla rice- or soymilk and 2 tablespoons cocoa powder

Directions

Put all ingredients in blender and blend until smooth.

*Variation: Use frozen strawberries instead of cherries, and/or low-fat chocolate almond milk, if available.
