Applesauce Muffins

Applesauce Muffins

Looking for an easy morning treat? Try these muffins that feature applesauce in place of oil, making for an extra-moist muffin!

Makes 12 muffins

Ingredients

2 cups whole-wheat pastry flour
1 tablespoon low-sodium baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup sugar
1 15-ounce jar applesauce
1/2 cup water
1/2 cup raisins

Directions

Preheat oven to 375 F.

Mix together flour, baking powder, baking soda, salt, cinnamon, and sugar. Add applesauce, water, and raisins and stir until just mixed. Line muffin tin with liners and fill to the top. Bake 25 to 30 minutes, until tops of muffins bounce back when pressed lightly. Remove from oven and let stand for 1 to 2 minutes, then remove muffins from pan. When muffins are cool, store in an airtight container.

Per muffin: Calories: 147; Fat: 0.5 g; Saturated Fat: 0.1 g; Calories from Fat: 2.9%; Cholesterol: 0 mg; Protein: 3 g; Carbohydrates: 35.4 g; Sugar: 17.8 g; Fiber: 3.2 g; Sodium: 155 mg; Calcium: 67 mg; Iron: 1.2 mg; Vitamin C: 0.8 mg; Beta Carotene: 3 mcg; Vitamin E: 0.3 mg
