Indian Pudding

Makes 6, 1/2-cup servings

Ingredients

1/2 cup cornmeal or masa harina
2 cups water
1 15-ounce can corn, undrained
1/3 cup maple syrup
1/4 teaspoon salt
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger

Directions

Combine cornmeal and water in a medium saucepan. Stir until smooth.

Purée canned corn and the liquid in a blender. Add corn purée to the cornmeal and stir. Bring to a simmer, then cook, stirring almost constantly, for about 10 minutes, or until thickened.

Stir in syrup, salt, cinnamon, and ginger, then transfer pudding to serving bowls. Serve warm or chilled.

Per serving (1/2 cup): 129 calories; 0.7 g fat; 0.1 g saturated fat; 5% calories from fat; 0 mg cholesterol; 2.3 g protein; 30.2 g carbohydrates; 12.4 g sugar; 1.5 g fiber; 206 mg sodium; 18 mg calcium; 1.2 mg iron; 4.2 mg vitamin C; 27 mcg beta-carotene; 0.1 mg vitamin E
